Physical and chemical properties
Purplish red liquid, soluble in water and ethanol, insoluble in acetone and petroleum ether. Good stability, heat resistance, light resistance, and storage resistance, but sensitive to oxidants. Sodium, potassium, calcium, barium, zinc, copper and trace iron ions have no effect on it, but it turns rose-red in case of tin, fades, and precipitates in case of lead and a large amount of trivalent iron ions. This product is acid resistant, and its pH value is red in the range of 1 ~ 6, but it will change color in the case of alkali. When the pH value is in the range of 7 ~ 12, it can turn from cyan brown to yellow. It turns yellow after heating for a long time.
High-quality red rice (such as Jiangsu Xiangxue glutinous rice, duck blood glutinous rice, Shaanxi black rice, Guizhou black glutinous rice, Yunnan black rice, and Guangdong black excellent sticky rice) is prepared by chemical method.
Toxicological basis
① LD50: (rat, acute oral) greater than 21.5g/kg (BW); No mutagenic effect.
② Ames test: no mutagenic effect.

Colorant.
GB 2760-2014 stipulates that it can be used to prepare milk, frozen drinks (except 03.04 edible ice), candy, prepared wine, and milk-containing drinks, and can be used in an appropriate amount according to production needs (the amount of solid drinks shall be increased according to the dilution multiple).
Red rice red is suitable for coloring acidic food, and the optimum pH value is ≤ 3 ± 0.5. Avoid contact with lead and a large amount of ferric ions in use to prevent fading and precipitation, and pay attention to avoid discoloration in case of alkali. It is suitable for beverages, candy, prepared wine, ice cream, jelly, wine, etc.
