Physical and chemical properties
White, with a shiny flake or needle-like crystals, odorless or slightly with the smell of benzoin or benzaldehyde. Stable in nature, but hygroscopic. It has a wide range of bacteriostatic effects and only has a poor effect on acid-producing bacteria.
Toxicological basis
① LD50: rat acute oral 1700mg / kg (BW).
② ADI: 0 ~ 5mg / kg (BW) (total amount is calculated by benzoic acid) (FAO / who, 1994).
③GRAS：FDA-21CFR184. 1021.
Application
Benzoic acid is used as a common preservative, which is difficult to dissolve in water. Therefore, sodium benzoate or its potassium salt is mostly used directly in an aqueous phase system. It should be dissolved in benzoic acid solution after adding it to water; Or used after dissolving with a small amount of 95% ethanol. Benzoic acid has good chemical stability and is suitable for various processing and production.
However, for the use conditions, the acidity of the medium should be controlled in the water system, combined with post sterilization and other treatment measures to achieve the best addition effect. The antibacterial activity of benzoic acid in the molecular state is stronger than that in the ionic state, and its optimum antibacterial acidity is pH2 5～4.0. In general food processing, when the acidity is controlled at pH ≤ 4, the antibacterial concentration can reach 0.05% ~ 0.1%.
