Physical and chemical properties

Ascorbyl palmitate food grade is a white or yellowish-white powder with a slight citrus smell. It is very difficult to dissolve in water or vegetable oil and is easily soluble in ethanol (1g is soluble in about 4.5ml ethanol). Melting point 107 ~ 117 ℃.

 

Toxicological basis

① ADI: 0 ~ 0.00125g/kg (BW) (calculated by ascorbate palmitate or ascorbate stearate, FAO / who, 1994).

②GRAS:FDA-21CFR 182.3149.

 

Application

Antioxidant

As a food antioxidant, L-ascorbyl Palmitate can be used in fat, oil, and emulsified fat products, basically, water-free fat and oil, instant rice flour products, bread, and instant Cereals, including rolled oats (slices), with a maximum dosage of 0.2g/kg; (calculated by ascorbic acid in fat) used in milk powder (including sweetened milk powder), cream powder and its prepared products, with a maximum dosage of 0.2g/kg; (calculated by ascorbic acid in fat) for infant formula food and infant auxiliary food, the maximum dosage is 0.05g/kg
