Physical and chemical properties
Colorless to white crystal or white crystalline powder, slightly ammonia odor, relative density 1.586. It is stable at room temperature, easily weathered in the air, slightly hygroscopic, unstable to heat, rapidly volatilized above 60 ℃, and decomposed into ammonia, carbon dioxide, and water. It is easily soluble in water (1g is dissolved in about 6ml of water), and the aqueous solution is alkaline. Soluble in glycerol, and insoluble in ethanol.
Carbon dioxide is passed into ammonia water to be saturated and then crystallized.

Application
Bulking agent
GB 2760-2014 stipulates that: as a bulking agent, it can be used in infant cereal auxiliary food in an appropriate amount according to production needs. All kinds of food (except food in Appendix 2) shall be used in an appropriate amount according to production needs.
Like ammonium carbonate, this product can decompose and release ammonia and carbon dioxide to distend food. However, the decomposition temperature of this product is higher than that of ammonium carbonate, and it should be used in dough with a higher processing temperatures.
This product is easy to have a residual odor in foods with high water content and affects the taste, so it is suitable for use in foods with low water content, such as biscuits.
FAO / who (1983) stipulates that it can be used for cocoa powder and sugar-containing cocoa powder, cocoa bean powder, cocoa cake, and cocoa oil cake, with a maximum dosage of 50g / kg (used alone or in combination with hydroxide, bicarbonate, and carbonate. Based on fat-free cocoa, it is calculated as anhydrous K2CO3).
