Potassium stearate
Physical and chemical properties
White or yellowish-white waxy solid, or white powder, slightly with grease smell. Stable under normal temperature and pressure, avoid contact with incompatible materials, and react with strong oxidants. Soluble in cold water, and more easily soluble in hot water and hot ethanol, the solution is alkaline due to hydrolysis. It is prepared from stearic acid and potassium hydroxide after high-temperature reaction, cooling, and separation.

Application
Emulsifier and anti-caking agent
Relevant provisions in GB 2760-2014: cake, the maximum dosage is 0.18g/kg; Spice and powder, the maximum dosage is 20.0g/kg.
Potassium stearate is greasy. It has high emulsifying efficiency and is sensitive to hard water. It can form calcium salt with hard water to deform or destroy the emulsion. It is a calcium-sensitive emulsifier.
