Sodium butyrate has the molecular formula CH₃CH₂CH₂COONa. It is a white, hygroscopic powder with a melting point of 250.0–253.0 °C and a distinct rancid cheese-like odor. As an organic salt of butyric acid, it is highly soluble in water and stable under light and heat. Butyric acid is a short-chain volatile fatty acid primarily produced by beneficial gut microbiota (e.g., Lactobacillus and Bifidobacterium) through the fermentation of carbohydrates and proteins in the large intestine. Butyrate can enter the liver via the portal vein and be converted to butyryl-CoA, which is further metabolized into ketone bodies, fatty acids, and cholesterol. The resulting ketone bodies can be synthesized into adenosine triphosphate (ATP), providing energy for intestinal mucosal cells. The unabsorbed portion enters other organs and tissues for metabolism.

Concept 1: Short-chain fatty acids (SCFAs) are organic fatty acids with carbon chains of 1–6, primarily consisting of acetate, propionate, and butyrate. The level of butyrate is a key indicator of intestinal health.
Concept 2: Undigested carbohydrates and fibrous polysaccharides that reach the large intestine are converted into SCFAs by anaerobic bacteria. Any factor affecting the substrates (undigested carbohydrates and fibrous polysaccharides) or the activity of anaerobic bacteria will directly reduce SCFA production.
