Physical and chemical properties

At normal temperature, this product is a light yellow viscous liquid or milky white plastic solid, odorless, and slightly bitter. After shaking with hot water, the emulsion is insoluble. Soluble in ethanol, ethyl acetate, chloroform, and other chlorinated hydrocarbons or benzene.

 

Toxicological basis

① LD50: rat acute oral 15g / kg (BW).

② ADI: no requirement (monoglycerides and diglycerides, FAO / WHO, 1994).

③ Cumulative toxicity test: if the accumulation coefficient (k) is greater than 5, it is a weak cumulative substance.

④ Mutagenicity test: micronucleus test, testicular chromosome aberration test.

 

Application

As a food preservative, glyceryl monooctanoate can be used in raw and wet flour products (such as noodles, dumpling skin, wonton skin, baked skin), pastries, baked food fillings, and surface hanging slurry (only bean fillings), and its maximum use amount is 1.0g/kg; The maximum dosage for meat enema is 0.5g/kg.
