Physical and chemical properties
White crystal, extremely soluble in water, easily hygroscopic and deliquescent, extremely easy to oxidize, decompose when heated to 250 ℃, turn yellow at 260 ℃ and turn brown at 283 ℃. It is prepared by the reaction of stannous chloride, citric acid and sodium hydroxide.
Toxicological basis
① LD50: 2.7g/kg (BW) in mice.
② Mutagenicity test: no mutagenicity was found in alnes test, bone marrow micronucleus test and mouse sperm chromosome aberration test.
Application
Stabilizer and Coagulators
GB 2760-2014 stipulates that the maximum consumption of canned fruits, canned vegetables, edible fungi and algae is 0.3g/kg.
Reference dosage in food processing: it is used to protect the color of coated canned mushrooms. When 0.02% is added, it can make the color similar to that of tinplate canned mushrooms without affecting the structure and flavor of mushrooms; 0.06% of this product is added to the coated iron tank. The tin content in the tank is lower than that in the tin tin tin tank. It is stored for 2 years.
The heavy metal content is Sn less than 200 μ G / g and Pb less than 2mg / g. Disodium stannous citrate is a reducing agent, which has certain anti-oxidation, anti-corrosion and color protection functions. It can be widely used for freezing canned lemons, citrus, green beans, asparagus, carrots, beetroot and so on.
